Step 1: Prepare The Pork Loin

 If you have bought frozen pork loin, make sure to defrost it first.

Place it in the refrigerator overnight to allow it to warm up a little bit and soften the muscles inside before washing it.

 After thawing it, wash it under cold running water and then use paper towels to dry it.

From there, you can start to trim the fat cap using a knife but leave 1/4 of an inch of the fat cap.

 The remaining fat cap will protect the pork loin from burning and add flavor and moisture to the meat.

Make sure to wash and sanitize your hands after handling any raw type of meat.

 

Step 2: Combine Ingredients

Start by pulling out the side tray and then filling it with the wood chip of your choice.

 I suggest using apple or cherry for this recipe to bring out the sweetness and the smoke flavor in the meat.

You can also use hickory for a smoky flavor on the pork loin.

 Pull out the bowl or pan in the smoker and fill it with half apple juice and half water.

Set the temperature to 225 degrees Fahrenheit and then close the lid to preheat while the vent is open.

 Place the pork loin on the middle rack with the fat side up and then set the timer to 3 hours.
