The USDA has provided guidelines on how to raise, prepare, package, and store meat.
So make sure that your provider follows those guidelines to make sure the pork loin is safe.
Here are some tips on how to get the right type of pork loin.
First, you should find a trusted supplier or a butcher shop that is well-sanitized and preferably raises the pigs in free-range.
The signs of a good cut of pork are pink flesh and little to no smell.
Ask the butcher shop if they have used antibiotics or hormones on the pigs and if so, avoid those as the quality might be low.

Smoked Pork Loin Recipe in a Masterbuilt Electric Smoker
Step 1: Prepare The Pork Loin
If you have bought frozen pork loin, make sure to defrost it first.
Place it in the refrigerator overnight to allow it to warm up a little bit and soften the muscles inside before washing it.
After thawing it, wash it under cold running water and then use paper towels to dry it.
From there, you can start to trim the fat cap using a knife but leave 1/4 of an inch of the fat cap.
The remaining fat cap will protect the pork loin from burning and add flavor and moisture to the meat.
Make sure to wash and sanitize your hands after handling any raw type of meat.
Step 2: Combine Ingredients
In this part, you will need to combine all the spices and herbs in a large bowl.
Add the oil and then mix them all and make sure that the spices distribute evenly throughout.
You will need a large bowl to smother the pork loin with the rub and ensure it is covered.

Step 3: Preheat The Masterbuilt Electric Smoker
Prepare the tools you will need in smoking the pork loin and then preheat the electric smoker.
Start by pulling out the side tray and then filling it with the wood chip of your choice.
I suggest using apple or cherry for this recipe to bring out the sweetness and the smoke flavor in the meat.

Pull out the bowl or pan in the smoker and fill it with half apple juice and half water.
