How to cook Pork Chops in Pit Boss Pellet Grill

What You Will Need

You can get boneless pork chops, but for this recipe, I got the bone-in pork chops. Get around 4 or 5 10-ounce pork chops or get more if you are planning on feeding many guests ahead.

The bone-in pork chops have the perfect flavor as the bone helps keep the meat full of meaty flavor. I also chose bone-in pork chops because they are better at staying moist and soft.

So once you have settled with the pork chops you want to get, it is time to select the marinade and rub for the meat. You can choose your favorite rub that you have been used to.

If not, you can get the ones for this recipe. First, you will need the Sweet Rib Rub Seasoning from Pit Boss as it gives the best rub for cuts of meat that usually have bones in them.

 You will also need the marinade, and we have the perfect combination for that. 4 minced garlic cloves, a cup of ketchup, 2 tbsps of honey, 1/4 cup molasses, and 2tbsp Worcestershire sauce.

Remember that the number or the amount of the marinade ingredients is for four pork chops. So if you have bought more pork chops, then you need to adjust the ingredients.

 

Procedure

 This first part of the recipe needs the Pit Boss pellet grill’s basic grilling feature. It is pretty simple, and you can follow it to make the best pork chops grilled at higher temperatures.

 Another simple recipe is further on if you want pork chops with more flavor and soft texture. So read on as we take you through the process of grilling the pork chops first.

 

Step 1: Rub The Pork Chops

 First, lay the pork chops in a large shallow pan with a butcher paper lining. Season them generously with the Sweet Rib Rub Seasoning using your hands with gloves on.

Make sure that you get the rub all over the pork chops. Lift each one of the pork chops and then press them with your hands to make sure that the rub sticks on the pork chops before resting. 

There is no need to refrigerate the pork chops after putting the rub on them to prevent them from hardening. Set them aside and prepare the marinade or the glaze for the pork chops.

 

Step 2: Prepare the Glaze

Get a medium-sized bowl and then mix the ingredients for the marinade. Add about a tablespoon of the Sweet Rib Rub Seasoning, and then mix the ingredients thoroughly.

Add a shot of bourbon to the mixture and then mix the marinade again. Ensure that you continue stirring and mixing the ingredients until the mixture has a smooth consistency. 

Transfer the mixture to a saucepan that you can use in ovens. You will need to put it in a saucepan that is oven-safe since you will be cooking it alongside the pork chops later on.

 

Step 3: Preheat The Pit Boss Pellet Grill

There are many grills models from Pit Boss, and you will need to preheat the one you have ahead of time. Fill up the pellet hopper about halfway since you would not need too many.

The pork chops’ cooking process is short, so avoid wasting the wood pellets by filling up the hopper with just the right amount of pellet. Fire it up and set it to 375 degrees Fahrenheit. 

This is around medium heat for most grills, so if you are not using Pit Boss grills or grills with no specific indicators on the temperature, set the grill you have to medium heat.

 

Step 4: Cook The Pork Chops

One by one, place the pork chops in the Pit Boss grill, arranging them to fit in one go. Allow them to cook with the lid closed to also enhance some of the smoke from the pellets.

 Let the pork chops cook for 10 to 15 minutes on each side. Place the saucepan beside the pork chops and let it cook until it comes to a boil before you glaze the pork chops with it.

Use a grilling brush and glaze the pork chops on each side; let them continue to cook until the glaze has caramelized. Get your meat probe and insert it into the thickest part of the pork chop.

 

Step 5: Finish Cooking 

Aim for an internal temperature of 145 to 165 degrees Fahrenheit for the pork chops. Once they reach that temperature, remove them from the grill and set them aside to rest on aboard.

Let them rest for 5 minutes and glaze them again with the marinade. This is not necessary, but if you want, you can add the glaze once more before serving them while they are still hot. 

Slice the pork chops and serve them with the glaze or you can just let them be and allow the person to slice the pork chops. They go well with salad or some carbs on the side.

Smoking The Pork Chops 

Another technique is cooking the pork chops if you want them to have more of that barbecue or smoky flavor. That is to cook them at slow and low temperatures on the grill. 

The same process goes through making the rub and the glaze. The difference is that you need to set and fire up the Pit Boss pellet grill to a much lower temperature of 250 degrees Fahrenheit.

Once the pellet grill has reached that temperature, place the pork chops on the grill and close the lid. Turn the smoke enhancer on the grill if you have a Pit Boss model that has that feature.

Let them cook for 1 hour and 30 minutes with the meat probe inserted into the pork chops’ thickest part. That time will get the pork chops to an internal temperature of 145 Fahrenheit.

This cooking style will remove most of the pink color in the pork chops’ center, but they will stay juicy and soft. The outer color should be brown, and the glaze should have caramelized.

 After the pork chops reach the desired temperature, remove them from the grill and rest for about 5 to 10 minutes while covered in aluminum foil before serving.

    1. I would say in the last 20-30 minutes of cooking you can apply the glaze. If you go with higher temperatures of slow cooking then you can apply the glaze in the last 15-20 minutes. Hope this helps!
