You can make the juiciest and most tender turkey breast even without brine.

 Usually, turkey breast cooks after brined to get enough flavors and so it will not dry out from the heat.

However, this is not the only way to do it to get rid of the brine.

 This is risky as you might get left with the turkey breast being too dry and grainy.

You need to time it right and cook it at the right temperature to ensure that the turkey breast stays juicy.

 To do this, you still need to make sure that the ingredients you use are fresh and have moisture in some of them.

You can use marinade but then that would be sort of brining.

 The best way to marinate the turkey breast without submerging it into a mixture of ingredients is to make a marinade and inject it into the turkey breast.

Smoked Turkey Breast Without Brine On A Pit Boss Grill

 

What You Will Need

  • 1 large turkey breast
  • 1 injection syringe

 

For The Rub

  • 1 tablespoon of paprika
  • 1 tablespoon of chili powder
  • 1 tablespoon of onion salt
  • 1 tablespoon of garlic salt
  • 1 teaspoon of salt
  • 1 teaspoon of ground black pepper
  • 1/4 cup of room temperature butter

 

For The Injection Marinade

  • 1/4 cup of melted butter
  • 1/4 cup of oil
  • 1/4 cup of water
  • 3 tablespoons of Worcestershire sauce
  • 1/2 lemon
  • 1 teaspoon of ground sage
  • 1 teaspoon of dried thyme
  • 1 teaspoon of garlic salt
  • 1 teaspoon of onion salt

 

Step 1: Prepare The Turkey Breast 

Leave the turkey breasts in the refrigerator overnight to defrost, or you can place them in the sink and let cold water drip over them to defrost them slowly before you wash them.

Once defrosted, wash the turkey breast and then put it on a plate to rest a little bit.

Pat it dry with paper towels, and then prepare the other ingredients and tools you need while waiting.

 

Step 2: Marinate The Turkey Breast

Once ready, mix all the ingredients for the marinade in a bowl and then fill up the syringe with it. 

Poke one small hole into the turkey breast and then inject the marinade into the turkey breast.

 Move the needle around the turkey breast and make sure that you do not poke holes that are too large.

Apply as much marinade as needed to the turkey breast as you move it around.

Ensure that the turkey breast gets enough of the marinade but it does not need too much of it.

Distribute the marinade evenly throughout the turkey breast and allow it to rest for a little bit.

 

Step 3: Season With The Rub 

Get the melted butter and then rub it all over the turkey breast.

Make sure that you the butter all over the turkey breast and go in between the skin and the meat of the turkey breast.

 Get your hands into the turkey breast and apply some of the melted butter inside the cavity.

Mix the ingredients for the rub and do the same thing with them by applying it all over the breast.

Wrap the marinated and seasoned turkey rub in plastic wrap and then place it in the refrigerator.

Allow it to absorb the seasonings for at least an hour before you cook it or up to 24 hours.

 

Step 4: Cook The Turkey Breast

 Preheat the Pit Boss grill by putting a lot of pellets on the pellet hopper.

You can choose whatever type of wood pellets you want to use, or you can go with apple or cherry pellets.

Set the temperature to 225 degrees Fahrenheit and let the grill preheat with the lid closed for 15 minutes.

This is to allow the interior of the grill to heat up properly and distribute the what evenly.

Place the turkey inside the smoker and then insert a meat probe into the thickest part of the turkey breast.

Allow the heat to get up to 350 degrees Fahrenheit but not over that.

Cook the turkey breast for 3 hours or depending on the weight of the breast.

Just make sure that the internal temperature of the turkey breast reaches 165 degrees Fahrenheit.

Once it reaches that internal temperature, remove the turkey from the grill and rest for at least 20 minutes.

How Long Does It Take To Smoke A Turkey Breast On A Pit Boss Pellet Grill?

It depends on many factors as smoking turkey breasts does not only take on the time of cooking.

You need to consider the weight of the turkey breast and the temperature.

 As a rule of thumb, the turkey breast should be smoked at 225 degrees Fahrenheit 45 minutes per pound.

You can increase the temperature and cook the breast much faster.

At 350 degrees Fahrenheit, the turkey breast needs to cook for 15 minutes per pound.

You will also need to turn and flip the turkey breast now and then distribute the moisture evenly.

 

How Do You Smoke A Turkey Breast On A Pit Boss Pellet Grill? 

First, you need to make sure that you have thawed and prepared the turkey breast.

It is your choice to either leave the skin on or not when you smoke turkey breast, but I prefer leaving it. 

Trim off some of the fats, especially inside the cavity of the turkey breast to make sure that it does not get too greasy, leave some to make it juicy. Prepare and preheat the Pit Boss grill.

Ensure that you put enough seasoning on the turkey breast as it is one of the bland areas on the bird.

Cook the turkey breast at 225 degrees Fahrenheit and do not forget your meat probe.

There is no need to flip or turn the turkey breast, but you can if you want to.

Some would suggest that you need to cook turkey breast on a pellet grill at a temperature of 300-325 degrees Fahrenheit.

This is when you want the turkey breast to cook quickly.

At that temperature, an average turkey breast cooks within 1 and a half hours. 

However, it is quite challenging as you risk burning the outer parts of the turkey breasts.

I recommend that you cook the turkey breast at 225 degrees Fahrenheit in a pellet grill so that you can slowly manage it until it cooks. It is also great for beginner cooks.
