What You Will Need?
The first thing you should keep in mind is that you need to get the best ingredients for this recipe.
It is easy to find a whole chicken on the market but are you sure it is the best one?
See, there are indications that a whole chicken is properly dressed or butchered.
Clear signs such as a balanced color on the meat and patches of fats lying underneath the surface.
There are also some things that you should avoid.
Make sure not to get a chicken with blood clots on the meat itself as it is a clear sign that the bird has been under immense stress.
Blood on the bones is pretty natural and it means that the chicken is still a bit fresh.
As for the other ingredients, you will need 3 tablespoons of barbecue sauce, 2 tablespoons of olive oil, and 4 to 6 tablespoons of the original Pit Boss Champion Chicken Seasoning.

Beer Can Chicken On A Pit Boss Pellet Grill
Step 1: Wash The Chicken
To prepare the chicken properly, remove it from the bag and ensure it is clean and fresh. Pull out any part inside the chicken that is not pure meat or muscle.
Wash the chicken by rinsing the insides with water. The water coming out of the chicken should not have blood or other residues in it so rinse it until the water that comes out is clear.
Pat the chicken dry with paper towels and then let it sit at room temperature to make sure all parts are thawed or defrosted. Keep it covered so insects such as flies will not land on it.
Step 2: Prepare The Beer
Open the can of beer and then pour out the beer until you only have half of the beer in the can. Add the barbecue sauce into the beer can or the chicken throne and then set it aside.
Step 3: Season The Chicken
Brush the outsides of the chicken with olive oil and be generous with it.
Season the chicken with the Pit Boss Champion Chicken Seasoning and use your hands to rub it all over the chicken.
Make sure to get the crevices and spaces between the legs, thighs, and wings.
Let the chicken rest for at least 15 minutes with the seasoning to take in all the flavors from the spices.
Carefully slide the chicken into the beer can until the whole body is standing on itself. Tuck the wings behind the chicken and then prepare the tools you need for the cooking process.
Cooking The Chicken
Step 1: Preheat The Pit Boss Pellet Grill
Get your favorite pellets and fill up the pellet hopper of the Pit Boss pellet grill. Pit Boss suggests using their very own Hickory Hardwood Pellets to get the best aroma for this recipe.
Preheat the grill and set the temperature to 350 degrees Fahrenheit. Ensure to close the lid while preheating to ensure that the heat inside is even throughout the grill.
Step 2: Cook The Beer Can Chicken
Place the beer can chicken on the grill at an upright position and then close the lid. Allow it to grill for 1 hour to 1 hour and 15 minutes and not disturb the cooking process.
Do not frequently open the grill lid to check the chicken or else you will lose a lot of heat.
Insert a meat probe into the chicken and wait until it has reached the desired internal temperature.
The thickest part such as the legs, thighs, and wings should be at least 180 degrees Fahrenheit internally.
You can also check the doneness by piercing the skin with a fork to see the juices.
The juices should run clear with no blood coming out of the chicken.
Once it reaches the desired internal temperature, you can then remove the chicken from the grill and allow it to rest.
By letting it rest for at least 15 minutes, you will be allowing the juices to return to the meat.
It, in turn, makes the chicken juicier and more tender when you cut through the meat.
So let the chicken rest for 15 minutes and then serve it while it is still warm.
