What You Will Need

You will need to select the best chicken wings from the supermarket or a butcher shop for this recipe.

Just make sure that the wings are processed or butchered properly before you buy them.

There are clear signs of a perfectly cooked chicken wings and then there are those not managed properly.

First, you need to see some fat content in between the skin of the chicken.

 The chicken wings have a lot of joints and this is the part where fats are pretty dominant.

You will be able to see the yellow fat pockets on the skin and you should not avoid those fats.

 You can grill the chicken wings for quite a while so they retain some fat to keep them juicy.

It will also help them in making the meat tender even after a long time of cooking.

 One thing that you should avoid is blood clots on the chicken skin.

The blood on the parts where the butcher cut it is pretty standard, but having a clot elsewhere is not a good thing.

 Avoid chicken wings that are also too yellow as that simply means that they are old.

The color of the chicken wings should be partly pale yellow and some pinkness on the joints and meat.

 The seasoning should also not be too overpowering.

Chicken Wings On A Pit Boss Pellet Grill

 

Step 1: Prepare Your Tools And Ingredients

 Get all the ingredients you need to make your seasoning or use the Champion Chicken Seasoning.

Mix them while you defrost the chicken wings so you can season them right away after they thaw.

 There are not too many tools needed for cooking chicken wings, but you need to get them ready to function properly while cooking with no hassle and interruptions.

 You need tools such as tongs and grill spatula for this cooking process.

Get your towels and bowls ready so you can cook with everything you need around you and not away from the grill.

 

Step 2: Defrost The Chicken Wings And Season

 If the chicken wings are frozen, make sure to defrost them properly by leaving them in the refrigerator for at least 12 hours or overnight. 

You can also speed up the defrosting process. 

Defrosting the chicken wings overnight can be too long for some people.

You might want to cook them right away, so you need to defrost them by placing them under running water.

Do not use warm or hot water in defrosting the chicken wings because although it is effective and will defrost the chicken quickly, it will start to dry out the chicken wings before cooking. 

Place them under cold running water and then make sure that you get all the seasonings ready.

Once the wings have defrosted, dry them by blotting them with paper towels and get some olive oil.

Once they are dry, brush a thin layer of olive oil on each chicken wing and then sprinkle them with the Champion Chicken seasoning.

This is the best seasoning for a BBQ-flavored finish.

 Be generous and make sure that you put the seasoning on all sides of the chicken wings.

Allow them to rest on a tray pan to make sure that they absorb all the flavors from the seasoning.

 

Step 3: Preheat The Pit Boss Grill

 Fill up the pellet hopper of the Pit Boss grill with wood pellets and then fire it up. For this recipe.

Pit Boss recommends using their very own Competition Blend Hardwood pellets for cooking. 

This set gives the chicken a unique finish that you cannot get with other wood pellets.

Set the grill temperature to 350 degrees Fahrenheit and then allow the grill to heat up.

Make sure to close the lid of the grill and allow it to heat up and make the heat evenly distributed inside the cooking chamber.

Check the temperature after 15 minutes of preheating.

 

Step 4: Grill The Chicken Wings

 Place the chicken wings in the grill and close the lid while allowing them to grill for at least 20 minutes. 

Do not frequently open the grill as it will quickly lose some of the heat inside it.

 After 20 minutes, check the chicken wings and then flip them over.

Do it quickly so you will not lose heat, after that, allow the chicken wings to cook for another 20 minutes with the lid closed.

Before you close the lid, insert a meat probe into the thickest part of the chicken wings and then allow it to cook further.

Do not remove the chicken wings until they reach 165 degrees Fahrenheit.

 

Step 5: Let Them Rest

 Once the chicken wings reach 165 degrees Fahrenheit as their internal temperature, remove them from the grill and then allow them to rest on a tray or a cutting board for at least 5 minutes.

This resting period will allow the juices to come back into the meat and make it juicy.

It also helps cook the wings even more while also making sure that the meat is tender.

After 5 minutes, you can then prepare your favorite sauce and serve the chicken wings.
