How To Cook Perfect Steak In Infrared Grill

Infrared grills are great for cooking any recipe that you want to cook for your family.

Here, I will guide you on cooking perfect steak in infrared grill to make your steaks juicy and tender.

 The main challenge for cooking steaks is to make sure that they stay tender and juicy while putting enough heat inside to cook them perfectly and create a crispy crust.

This is not easy to do with regular grills, but you can make the job a lot easier if you have an infrared grill.

Infrared grills involve radiant heat that goes through the middle of the steaks.

The immense heat from the burners can also create crispy crusts on the steaks.

The nice browning outside the steak while also leaving the middle part with pinkness is truly great.

I have to admit, it is not that easy to cook steaks or anything on an infrared grill especially if you are a beginner.

You have to deal with so much heat that more often than not, you burn the food.

So this guide aims to teach you the basics of cooking on an infrared grill so you always have perfectly cooked food when you use your powerful infrared grill for cooking at home.

 

Perfect Steak On An Infrared Grill

 

Ingredients 

  • 4 boneless steaks preferably 1 and 1/4-inch thick
  • 1 tablespoon of oil
  • 1 onion cut in half
  • 4 tablespoons of butter
  • Kosher salt
  • Freshly ground black pepper

 

Step 1: Prepare The Steaks

At least 30 minutes to an hour before cooking, bring out the steaks and then prepare them.

If you have bought frozen steaks, then make sure to defrost them in the refrigerator overnight. 

You can also bring them to the sink in a bowl and then let water drip over the steaks to defrost them.

Do not use warm or hot water when defrosting as it will dry out the meat later when cooking.

Just allow them to go down to room temperature and then start trimming.

Remove the unnecessary fats from the meat but leave a little bit of the fat cap to help keep the meat juicy.

 Leave at least 1/4 of an inch thick fat on the meat.

It will help the steak get a better flavor and keep the steak juicy despite cooking it on the infrared grill at high temperatures.

 

Step 2: Prepare The Grill

Make sure that the grill is clean before cooking anything on it.

Even if you have cleaned it after using it the last time, run through it one more time and remove dust or residues on the grill.

Get the onion that has been cut in half and then soak the cut side of the onion in oil.

Grab the onion and then run it through the grill grates to coat them with both oil and a little bit of flavor.

Preheat the infrared grill by setting the temperature between 300 degrees and 350 degrees Fahrenheit. 

Close the lid of the grill and preheat for at least 15 minutes to distribute the heat.

 Closing the grill lid will help even out the heat inside the grill, so even if you cook multiple steaks simultaneously, the finishes on the steaks will be the same for every cut of meat.

 

Step 3: Season The Steaks

 While waiting for the grill to preheat, season the steaks by patting them down with paper towels.

It is important to dry them before cooking so you get to have that crispy crust on them.

Season the steaks with kosher salt and freshly ground black pepper on both sides.

Use your hands to massage the seasoning into the meat for a little bit and then let them rest.

 

Step 4: Grill The Steaks

Now that everything is ready, place the steaks on the infrared grill and then close the lid.

The steaks will start to char at this temperature after only one minute so do not leave the grill unattended.

 Make sure to flip the steaks every minute or so to prevent them from burning.

If you use 300 degrees Fahrenheit on the grill, you can allow the steaks to cook for 4 to 5 minutes.

Use tongs to flip the steaks over after 5 minutes and then brush them with butter.

Insert a meat probe into the thickest part of the steak and then determine what doneness you want to have.

For medium-rare, the meat probe should read 135 degrees Fahrenheit.

At 140 degrees Fahrenheit, the steak cooked to medium and medium-well at 150 degrees Fahrenheit.

 

Step 5: Rest And Serve 

Once the steaks are done, remove them from the grill and then place them on a cutting board. Allow them to rest for at least 5 minutes before cutting them.

Letting the steaks rest allows the juices to get into the meat and create a tender finish.

This continues the cooking process to remove the steaks if they are 5 degrees from the desired temperature.

Slice the steaks or serve them as they are while still hot along with your favorite side dishes.

 

Tips On Cooking The Best Steak

Make sure that you choose the best cut of steak that you can find. If possible, get a prime or choice cut from the butcher shop to ensure that you have the best quality steaks. 

Always keep it clean. Ensure that the grill is cleaned and sterilized by burning off residuals and cleaning it with brushes and such every time you plan to cook in the grill.

Season the steak on time. Seasoning the steak is easy as you can use any of your favorite seasonings but make sure to do it right before you grill them to ensure maximum freshness and flavor.

 Do not pierce the steaks. If you want to flip them over, use tongs and never pierce the steaks with forks and such so that the juices in the meat stay inside it and keep the steak tender.

Allowing the steak to rest is also a very important part of the process. Ensure that you let the juices come back into the meat and do not serve or cut the steaks right after grilling them.

 

How To Sear On An Infrared Grill?

It is not easy to sear steaks on an infrared grill as they can sometimes get too hot and burn the steaks before you can put a nice sear on them.

The secret is to time the process properly.

Place the steaks on the grill and then turn the conventional burners to low.

Allow the infrared burners to remain high to allow radiant heat to get into the steaks when cooking.

 After one minute, turn the steaks halfway through to create a criss-cross pattern on the crust.

Allow to grill for another minute before flipping the steaks over to do the same thing.

If you are using a high temperature to cook the steaks, make sure not to leave them cooking on one side only for more than 3 minutes.

This will likely burn the steaks instead of charring them.

The sear will depend on how much charing you want.

Remember not to sear the steak for too long that it burns and creates a bitter taste when you bite into it.
