What You Will Need

Go to a trusted butcher shop early in the morning to get the fresher cuts so it won’t run out.

Pork, unlike cow meat, is not red so you should avoid those and look for a pork butt that has a slightly lighter color of pink.

Ingredients
- 8 pounds of Boston butt
- 5 tablespoons of yellow mustard
- 2 tablespoons of paprika
- 2 teaspoons of black pepper
- 1 tablespoon of onion powder
- 1 tablespoon of garlic powder
- Half teaspoon of cayenne pepper
- 1/3 cup of brown sugar
- 1 spray bottle of apple cider vinegar
- Water for the electric smoker’s drip pan
Step 1: Prepare And Clean The Pork Butt
If you are working with fresh pork butt, then you should prepare it beforehand.
You will need to allow sometime to prepare the pork butt, especially if you got one with the skin and fat cap on.
First, prepare a clean cutting board and then lay the pork button it.
Trim the fat cap off but make sure to leave at least 1/4 of an inch thick to make sure the meat does not dry out when cooking.
Wash it after trimming it under cold running water and then pat it dry with paper towels.
Make sure to clean the cutting board, sink, and your hands after to prevent any contamination.
Step 2: Prepare The Dry Rub
Combine all the dry ingredients in a bowl and then mix them well.
Get a glove, or you can use your bare hands to rub the yellow mustard around the pork butt and make sure to coat it completely.
Sprinkle the rub over the yellow mustard and then use your hands to massage it into the meat.
From there, you can place the pork butt in a pan then allow it to rest in the refrigerator overnight.
The following day or an hour before you cook, get it out of the refrigerator and place it on a clean work surface.

Step 3: Preheat The Masterbuilt Electric Smoker
Prepare your electric smoker and then fill up the side tray with the wood chips of your choice.
You can use apple or cherry for more flavor or put hickory in it to give the meat more smoke.
Set the temperature of the electric smoker to 225 degrees Fahrenheit and close the lid.
Ensure that the vent is open to light up the wood chips and start to produce smoke.
Fill up the pan halfway with water and place it inside the smoker.
This helps the pork butt get enough vapor to stay moist and juicy even outside while it cooks.
Step 4: Cook The Pork Butt
Place the pork butt inside the electric smoker directly on the rack and then place a clean pan under the rack to catch the oil and other drippings.
Insert a meat probe into the meat as well.
Allow the pork butt to smoke for up to 8 hours without opening the smoker’s lid too frequently.
Make sure to check the wood chip tray and the water pan now and then.
Fill up the wood chip tray every 60 minutes so you do not disturb the heat all the time.
Spray some apple cider vinegar on the pork butt every 2 hours to keep the outer parts moist.
You can also turn the pork butt over, but it is not necessary.
Check the internal temperature of the pork loin and make sure that it has reached at least 190 degrees Fahrenheit.
If it has not reached that temperature, bring the pork butt out of the smoker and then wrap it in aluminum foil.
Place it on a pan and let it smoke for another hour until it attains the set internal temperature.
Step 5: Let It Rest Before Serving
Once the pork butt reaches the desired internal temperature, remove it from the electric smoker and place it on a cutting board. Allow it to rest somewhere between 20-30 minutes.
